(Recipe is Barbecue Meatloaf Muffins by Rachel Ray, I made it with turkey)
I know, these look strange, and frankly, they are.  Before I go out of town, I usually try to make a good home-cooked meal... you know, try to make that 'home' feeling last a bit longer.  

This time I decided to try these and it was very, very good.  Think texas barbecue meets oklahoma rancher meets five year old girl (yeah, the muffin part kind of throws it off a bit), and that was the meal we had.  A bit spicy, so my brother enjoyed every last one that was left over.

A good farewell dinner that will hold me over... till next week.days of winter:: 20

  13. Ok, I have to admit that I was a little disappointed when I realized that these weren't chocolate, but I'm really good with the meatball idea.

  17. Wow, how creative! I use muffin pans to make breakfast veggie quiches. This is yet another creative use. Who knew they could be used for more than muffins and cupcakes?
